CHEESE PRODUCTION - Cheese production has been in existence for many thousands of years, starting from the time man discovered that his domesticated cows could be milked. It is likely that the first cheeses were sour milk cheeses. Milk left alone naturally sours and then curdles. As it curdles it separates, producing thicker curds and milkier whey. By pouring off the thickened curds, a type of fresh acid curd type cheese materialised, spawning a whole new dairy product. Cheese production has become varied throughout the world, depending on climate, soil, altitude, vegetation and also the development of the region and it’s economic status.
PRODUCE
Miles and Harrys are proud to provide the best quality, best in season and best organic Bermuda produce all year round - grown by our own farmers.
MILES FARMS - We have strict quality standards and only the freshest products are chosen when they are in season and at their best. The fields have been organically tended by using manure and green fertilisers. Miles Farms pick daily to make sure that you have the freshest and tastiest produce. We also have a selection of cooking and medicinal herbs. Each package displays the Miles Farms Logo so that you know exactly where the product was grown. Where we can, we bunch products to reduce the need for packaging; however, when packaging is required we carefully consider sustainability and recycling ability.
Nature’s Bounty: Did you know? - Bermuda used to have a vibrant Farming Industry and actually regularly exported fruits, vegetables and flowers to North America. But now the famous Bermuda Onion can only be found here at home. The North American "Bermuda Onion" actually comes from Bermuda, Texas!
HISTORY

The founder of the business was born eight years before the Battle of Waterloo was fought. It was this great victory that was celebrated when the house was built and named Waterloo. So in the first generation the “Waterloo” property began to be bought by investment in shares, and that was back in 1842 when William John Cox established himself in a general provisions business in Hamilton.
William J. Cox entered into one of the most lucrative businesses of the day – contracting the meat supply for the British Army and the Royal Navy in Bermuda. Mr. Somers Tucker, a competitor in the business operating his share of the meat business at “Waterloo”, eventually partnered. William J. Cox became the active partner and “Waterloo” property became the site of the cattle pen and abattoir. The Queen Street site was used to market the products…. read more here
THE PIPE + PEN
Much of what Miles is today is the legacy of Harry Cox - "The man at the helm" for many years who truly exemplified all that is good about Bermuda. Harry was always vigorous in the pursuit of his many passions, some of which included history, politics, diving, photography, writing, archeology and of course... excellent food and drink shared among friends and family.
Over a period of several years, Harry wrote a series of articles called The Pipe and Pen for publication in the Miles' newsletter. Collectively these writings provide a fascinating insight into life in Bermuda and Harry’s single minded focus on making Miles the foremost purveyor of gourmet food and drink from all over the world. These articles are reproduced here to be enjoyed by everyone however we ask that copyright be respected.
